Chocolate Zucchini Bread

I know the combination of chocolate and zucchini sounds weird to a lot of people, but this is probably the best bread I’ve ever eaten. It beats the banana-walnut-chocolate chip bread that I often bake. I got this recipe from the Producebox and will make it as long as I can find zucchinis!

Ingredients

3 large eggs
2 cups of sugar
1 tablespoon vanilla extract
2 cups zucchini, shredded (this is about 1 medium zucchini)
2 1/2 cups all-purpose flour
1/2 cup baking cocoa or Ovaltine
1 cup vegetable oil
1 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon cinnamon, ground
Cooking spray or butter to grease pans

Chocolate Zucchini Bread

Directions

In a mixing bowl, beat eggs, oil, sugar, and vanilla. Stir in zucchini. Combine dry ingredients, add to zucchini mixture and mix well. Pour into two greased 8x4x3 inch loaf pans. Bake at 350 for 45 minutes to an hour, or until a toothpick inserted into the breads comes out clean. Enjoy!!

    Hey Varsha! My boy HATES green veggies with a passion. I may try this in the hopes the sucker, I mean, Will, will eat it! Thanks!

      Thanks, Cheryl! You can still see some green, but not much, so it’s a great bread to hide veggies in :-). I just reduced the sugar a bit since it is pretty sugar loaded. You can also try half the amount of oil and replace the other half with apple sauce. That way it stays moist. I hope Will likes it!
