Now that it’s fall, it’s also…soup season!! I’m sharing my very favorite Instant Pot soup recipe. The reason it’s a favorite is because it’s as nutritious as it is nourishing and delicious. Our boys love it too and you can easily modify it to your liking and depending on which pantry items you have on hand. I often make this vegetarian by eliminating the chicken and using a veggie broth. I’ve also made this using Nutpods (a diary-free creamer) instead of coconut milk. My favorite way to make this is with chicken bone broth instead of regular chicken broth or stock. This recipe does require a bit of chopping, so chop ahead if you know you’re going to be short on time. Either way, this comes out amazing, so give it a try if you need a solid soup to make things nice and cozy!
